Healthy Muffin Recipe

I came across this recipe and then made a few extra changes to reduce calories and increase the nutritional value. Over the past year training for Ironman, we have been eating lots of bars, and other things and some of them are processed or have added sugar. I wanted to create something that we would be able to eat while training.

Here is the recipe:

Muffin recipe

1 cup of wheat germ

1 cup almond milk

½ cup applesauce

1 egg

½ cup of ground flax seed

1 mashed banana (you can add a second one if you want more banana flavour but reduce applesauce to 1/3 of a cup)

1/3 of a cup of raw organic honey

½ teaspoon vanilla extract

1 cup of spelt flour

1 ¼ teaspoon baking soda

1 ¼ teaspoon of baking powder

½ teaspoon sea salt

1 teaspoon of cinnamon

1 cup blueberries

Preheat oven to 375. Grease muffin pan with butter of use paper muffin cups. Mix almond milk and egg together. Add in applesauce, banana, honey and vanilla extra. Stir well. In a separate bowl add all dry ingredient and mix. Slowly add dry mixture to wet mixture, mix well. Add blueberries. Separate evenly between muffin cups. Option: in a small bowl add 1 table spoon of brown sugar and 2 teaspoons of cinnamon, mix together. Lightly dust the top of each muffin with mixture

Bake for 25 -30 minutes. Stick toothpick in before removing ( toothpick should have no muffin residue when removed)
